"Light, crispy Andy's Golden Fish Batter shrimp tossed in a homemade pineapple sweet and sour sauce."

Skip the takeout. Andy's Golden Fish Batter puffs up light and crispy around each shrimp, and a quick homemade sauce of pineapple juice, brown sugar and soy brings the sweet and tangy glaze.
This also works great with chicken, pork, and beef (adjust cook time accordingly). For some added heat, swap the ketchup for a hot chili paste.

In a bowl, add 2 cups of Andy's Golden Fish Batter and mix with 1.5 cups of water.
Add your shrimp to the batter.
Preheat your oil to 350-375°F.
Slowly add your shrimp to the oil and cook for 5-6 minutes.
For the sweet and sour sauce: in a sauce pan, add the pineapple juice, rice vinegar, soy sauce, and brown sugar.
Simmer until the brown sugar is dissolved.
Add your ketchup and stir until well incorporated.
In a small bowl, mix 2 tbsp cornstarch with 2 tbsp water and stir to make a slurry.
Add the slurry to your sauce pan and continue cooking your sweet and sour sauce until it thickens.
Once your shrimp is crispy, toss it in a bowl with your sweet and sour sauce.
