Herbed Beef Roast

8 lbs. Missouri Beef Rib Roast, rolled and boned

Minced rosemary

2 tbsp. dry mustard

4 tbsp. herb gathering leaf

1/2 cup flour

2 tsp. seasoned pepper

2 tsp. Andy's Seasoned Salt

  • Preheat oven to 350 degrees.
  • Wipe roast with wet paper towel, leaving surface very moist.
  • Combine flour and seasonings in a small bowl. Sprinkle evenly over moist surface of meat. Firmly pat mixture onto the meat.
  • Place roast fat side up on rack in shallow roasting pan. Insert meat thermometer into roast so bulb reaches center of roast.
  • Roast 3 hours or until thermometer registers 140 (rare) or 160 (medium).
  • Remove meat from oven; place on heated serving platter. Cover loosely with foil and let stand 20 minutes before slicing.
