Southern Style Catfish

1 cup Andy's Red Fish Breading

1-1/2 lbs. catfish fillets

Vegetable oil for frying

  • In a heavy frying pan, heat 1/4 to 1/2 inch vegetable oil to 375 degrees F. Moisten fish with water; shake off excess.
  • Pour Andy's Red Fish Breading into plastic bag. Shake moistened fish until evenly coated, a few pieces at a time.
  • Let fillets stand several minutes for coating to adhere.
  • Fry a few pieces at a time in hot oil for 2 to 3 minutes on each side or until golden brown; drain on paper towels. Serve with tartar sauce.
